🥗 Crunchy Salad with Caramelized Green Asparagus

Ingredients
- 500 g green asparagus
- 2 tbsp olive oil
- 1 tsp sugar
- 2 tbsp white balsamic vinegar
- salt
- pepper (from the mill)
- 1 head lettuce
- 4 hard-boiled eggs
- 100 g sour cream
- 2 tbsp mayonnaise
- 2 tbsp lemon juice
- chive rolls (for garnish)
Instructions
- 1. Peel the lower ends of the green asparagus spears.
- 2. Halve the spears lengthwise.
- 3. Heat some oil in a pan.
- 4. Fry the asparagus for 5 to 6 minutes on all sides.
- 5. Sprinkle sugar over the asparagus.
- 6. Let the sugar caramelize slightly.
- 7. Deglaze the asparagus with balsamic vinegar.
- 8. Season the pan with salt and pepper.
- 9. Remove the pan from the heat.
- 10. Let the asparagus cool to lukewarm.
- 11. Wash the head lettuce.
- 12. Remove the hard cores from the lettuce.
- 13. Spin the lettuce dry.
- 14. Tear the lettuce leaves into bite-sized pieces.
- 15. Peel the boiled eggs.
- 16. Halve the eggs.
- 17. Mix the sour cream with the mayonnaise.
- 18. Add the lemon juice to the mixture.
- 19. Add 3 to 4 tablespoons of water.
- 20. Season the dressing with salt and pepper.
- 21. Taste the sauce and adjust the seasoning.
- 22. Arrange the head lettuce on plates.
- 23. Top with the asparagus and eggs.
- 24. Drizzle everything with the dressing.
- 25. Sprinkle fresh chives over it.
- 26. Serve the salad immediately.
