  1. 1. Cook the glass noodles according to the package instructions. Remove from heat, drain the water, and let the noodles drain well.
  2. 2. Wash the bell peppers thoroughly. Cut them in half lengthwise, remove the inside, and slice the flesh into thin strips. Peel the onion and slice it into thin rings.
  3. 3. Mix the chili sauce with the ginger, oil, and soy sauce in a bowl. Season the mixture to taste with sugar and lime juice.
  4. 4. Add the drained noodles to the onion rings and pepper strips. Toss everything well with the dressing. Serve the salad garnished with fresh parsley and roasted peanuts.
