🥗 Noodle Salad with Nuts

Ingredients
- 300 g glass noodles
- 2 bell peppers (red and yellow)
- 1 red onion
- 2 tbsp chili sauce (sweet and spicy)
- 1 tsp finely chopped ginger
- 2 tbsp sesame oil
- 3 tbsp soy sauce (light)
- 1 pinch brown sugar
- 1 dash lime juice
- 1 tbsp coarsely chopped parsley
- 50 g peanuts (unsalted)
Instructions
- 1. Cook the glass noodles according to the package instructions. Remove from heat, drain the water, and let the noodles drain well.
- 2. Wash the bell peppers thoroughly. Cut them in half lengthwise, remove the inside, and slice the flesh into thin strips. Peel the onion and slice it into thin rings.
- 3. Mix the chili sauce with the ginger, oil, and soy sauce in a bowl. Season the mixture to taste with sugar and lime juice.
- 4. Add the drained noodles to the onion rings and pepper strips. Toss everything well with the dressing. Serve the salad garnished with fresh parsley and roasted peanuts.
