🥗 Fresh Salad with Egg, Shrimp and Strawberry Dressing

Ingredients
- 3 eggs
- 100 g lamb's lettuce
- 300 g small salad cucumber (1 small cucumber)
- 1 bunch radishes
- 0.5 bunch spring onions
- 100 g strawberries (or other seasonal fruit)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- salt
- pepper
- dried thyme
- 130 g feta cheese (45 % fat in dry matter)
- 100 g shrimp (precooked; from the refrigerated shelf)
- 2 slices whole grain bread
Instructions
- 1. Boil a few eggs in boiling water for about 6 minutes.
- 2. Let the eggs cool down.
- 3. Wash the lamb's lettuce thoroughly.
- 4. Spin the lamb's lettuce dry.
- 5. Wash the cucumber.
- 6. Slice the cucumber.
- 7. Wash the radishes.
- 8. Slice the radishes.
- 9. Wash the spring onions.
- 10. Slice the spring onions.
- 11. Wash the strawberries.
- 12. Dice the strawberries finely.
- 13. Whisk olive oil, vinegar and honey in a bowl.
- 14. Fold the diced strawberries into the oil-vinegar mixture.
- 15. Season the dressing with salt.
- 16. Season the dressing with pepper.
- 17. Add thyme to the dressing.
- 18. Peel the cooled eggs.
- 19. Halve the eggs.
- 20. Crumble the feta cheese with your hands.
- 21. Mix the lamb's lettuce with the cucumber slices.
- 22. Mix the salad with the radish slices.
- 23. Mix the salad with the spring onions.
- 24. Add the shrimp to the salad.
- 25. Distribute the feta cheese on top of the salad.
- 26. Place the eggs on top of the salad.
- 27. Drizzle the salad with the dressing.
- 28. Serve the salad with bread.
