🥗 Lamb Salad with Clementines

Ingredients
- 2 radicchio heads
- 80 g watercress (2 handfuls)
- 3 clementines
- 1 pomegranate
- 3 tbsp raspberry vinegar
- 2 tsp honey
- 3 tbsp walnut oil
- 2 tbsp rapeseed oil
- salt
- pepper
- 1 tsp frying fat
- 1200 g lamb chops (12 lamb chops)
- coarse sea salt
Instructions
- 1. Wash the radicchio, shake it dry, and cut it into thin strips. Wash the watercress and dry it thoroughly. Peel the clementines and separate them into individual segments. Cut the pomegranate in half and carefully remove the seeds.
- 2. Whisk together the raspberry vinegar, honey, walnut oil, and rapeseed oil to make a dressing, and season with salt and pepper. Mix the radicchio, watercress, clementines, and pomegranate seeds in a bowl. Divide the mixture among four plates and drizzle with the vinaigrette.
- 3. Heat a grill pan and brush it with some cooking oil. Rinse the meat under cold water and pat it dry thoroughly. Fry it in the hot pan for about two minutes on each side. Place the meat on the plates, sprinkle with sea salt, and serve immediately.
