🥗 Fresh Salad with Avocado and Papaya

Ingredients
- 150 g mixed salad (e.g. radicchio, batavia, arugula)
- 2 avocados
- 1 papaya
- 1 celery stalk
- 1 shallot
- 1 tsp hot mustard
- 1 tbsp honey
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 4 tbsp walnut oil
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the salad leaves under running water.
- 2. Remove woody stems or wilted green parts from the salad.
- 3. Tear the salad leaves into bite-sized pieces if necessary.
- 4. Peel the avocados.
- 5. Peel the papayas.
- 6. Halve the avocados and remove the pits.
- 7. Halve the papayas and remove the seeds.
- 8. Cut the avocado halves into wedges.
- 9. Cut the papaya halves into wedges.
- 10. Wash the celery.
- 11. Remove the leaves and the fibrous end from the celery.
- 12. Slice the celery into thin rounds.
- 13. Peel the shallot.
- 14. Finely chop the shallot.
- 15. Put mustard, honey, vinegar, lemon juice, and oil into a bowl.
- 16. Stir the ingredients for the dressing well together.
- 17. Fold the finely chopped shallot into the dressing.
- 18. Season the dressing with salt.
- 19. Season the dressing with pepper.
- 20. Place the prepared salad leaves on plates or a large platter.
- 21. Distribute the avocado and papaya wedges over the salad.
- 22. Distribute the celery slices over the salad.
- 23. Drizzle the salad with the prepared dressing.
- 24. Serve the salad immediately.
