🥗 Fruity Salad with Avocado and Strawberries

Ingredients
- 500 g strawberries
- 2 ripe avocados
- 100 g Lollo bionda (or oak leaf lettuce)
- 45 g roasted pistachio kernels (3 tbsp)
- 4 tbsp olive oil
- 2 tbsp orange juice
- 1 tbsp white balsamic vinegar
- 1 tsp honey
- salt
- pepper
- 4 sprigs mint
Instructions
- 1. Remove the green stems from the strawberries.
- 2. Wash the strawberries thoroughly.
- 3. Cut the strawberries into bite-sized pieces.
- 4. Cut the avocados in half.
- 5. Remove the pits from the avocado halves.
- 6. Scoop the avocado flesh out of the skin carefully with a spoon.
- 7. Cut the avocado flesh into small cubes.
- 8. Place the avocado cubes and strawberry pieces into a large bowl.
- 9. Remove any wilted leaves from the salad greens.
- 10. Wash the salad greens thoroughly.
- 11. Spin the salad dry.
- 12. Tear the salad into slightly smaller pieces.
- 13. Add the prepared salad to the bowl with the avocado and strawberries.
- 14. Sprinkle the pistachio kernels over the mixture.
- 15. Place the oil, orange juice, vinegar, honey, salt, and pepper into a small container.
- 16. Mix the dressing ingredients vigorously together.
- 17. Wash the mint.
- 18. Shake the mint dry.
- 19. Pluck the mint leaves off the stems.
- 20. Plate the salad.
- 21. Garnish the salad with the fresh mint leaves.
- 22. Serve the dressing on the side.
