🥗 Crunchy Salad with Caramelized Nuts and Tofu

Ingredients
- 50 g mixed nut kernels
- 15 g Butter
- 2 tsp Cane sugar
- Salt
- 150 g Baby salad mix
- 2 Oranges
- 7 tbsp light vinaigrette
- 175 g Smoked tofu
- 1 tsp Rapeseed oil
Instructions
- 1. Place the nuts in a dry frying pan.
- 2. Lightly toast the nuts over medium heat, stirring constantly.
- 3. Add the butter to the toasted nuts in the pan.
- 4. Sprinkle the mixture with sugar and a pinch of salt.
- 5. Allow the butter and sugar to melt.
- 6. Keep stirring until the sugar becomes liquid and light brown.
- 7. Transfer the caramelized nuts onto baking paper.
- 8. Let the nuts cool down completely.
- 9. Coarsely chop the cooled nuts again.
- 10. Thoroughly wash the salad greens.
- 11. Dry the salad greens using a salad spinner or a cloth.
- 12. Cut or tear the salad greens into bite-sized pieces.
- 13. Peel the oranges thickly with a knife.
- 14. Remove all the white pith in the process.
- 15. Use a sharp knife to release the fruit flesh from the membranes.
- 16. Slice the tofu into 1 cm thick slices.
- 17. Heat the oil in a frying pan.
- 18. Fry the tofu slices until golden brown on each side.
- 19. Let the fried tofu drain on kitchen paper.
- 20. Mix the salad greens and orange segments with the vinaigrette.
- 21. Place the salad on plates.
- 22. Sprinkle the caramelized nuts over the salad.
- 23. Place the fried tofu slices on top of the salad.
- 24. Serve the dish immediately.
