  1. 1. Peel the shallot and cut it into very small cubes.
  2. 2. Wash the fava beans and shake them dry.
  3. 3. Bring plenty of water to a boil.
  4. 4. Cook the fava beans in the boiling water for 5 to 6 minutes.
  5. 5. Add the shallot cubes to the beans during the last few minutes of cooking.
  6. 6. Drain the beans and shallots in a fine mesh sieve.
  7. 7. Place the drained mixture into a bowl.
  8. 8. Add lemon juice.
  9. 9. Wash the pear.
  10. 10. Cut the pear into wedges.
  11. 11. Remove the core of the pear.
  12. 12. Cut the pear wedges into small pieces.
  13. 13. Mix the pear pieces with the fava beans.
  14. 14. Heat a pan without fat.
  15. 15. Toast the pine nuts at medium heat for 2 to 3 minutes until golden brown.
  16. 16. Let the pine nuts cool down.
  17. 17. Roughly chop the cooled pine nuts.
  18. 18. Wash the mint.
  19. 19. Shake the mint dry.
  20. 20. Pluck the mint leaves from the stems.
  21. 21. Set aside a few mint leaves for decoration.
  22. 22. Chop the rest of the mint leaves.
  23. 23. Peel the garlic.
  24. 24. Mix the salad with the chopped mint, pine nuts and garlic.
  25. 25. Season the salad with salt and pepper.
  26. 26. Drizzle with oil and mix well.
  27. 27. Fill the salad into small bowls.
  28. 28. Garnish the salad with Parmesan.
  29. 29. Garnish the salad with the reserved mint leaves.
  30. 30. Serve the salad.
