🥗 Fava bean salad with pear, mint and toasted pine nuts

Ingredients
- 1 shallot
- 500 g fresh broad beans (shelled)
- 4 tbsp lemon juice
- 1 large pear (ripe)
- 50 g pine nuts
- 3 sprigs mint
- 1 clove garlic
- salt
- pepper
- 4 tbsp olive oil
- 20 g Parmesan (shaved, for garnish)
Instructions
- 1. Peel the shallot and cut it into very small cubes.
- 2. Wash the fava beans and shake them dry.
- 3. Bring plenty of water to a boil.
- 4. Cook the fava beans in the boiling water for 5 to 6 minutes.
- 5. Add the shallot cubes to the beans during the last few minutes of cooking.
- 6. Drain the beans and shallots in a fine mesh sieve.
- 7. Place the drained mixture into a bowl.
- 8. Add lemon juice.
- 9. Wash the pear.
- 10. Cut the pear into wedges.
- 11. Remove the core of the pear.
- 12. Cut the pear wedges into small pieces.
- 13. Mix the pear pieces with the fava beans.
- 14. Heat a pan without fat.
- 15. Toast the pine nuts at medium heat for 2 to 3 minutes until golden brown.
- 16. Let the pine nuts cool down.
- 17. Roughly chop the cooled pine nuts.
- 18. Wash the mint.
- 19. Shake the mint dry.
- 20. Pluck the mint leaves from the stems.
- 21. Set aside a few mint leaves for decoration.
- 22. Chop the rest of the mint leaves.
- 23. Peel the garlic.
- 24. Mix the salad with the chopped mint, pine nuts and garlic.
- 25. Season the salad with salt and pepper.
- 26. Drizzle with oil and mix well.
- 27. Fill the salad into small bowls.
- 28. Garnish the salad with Parmesan.
- 29. Garnish the salad with the reserved mint leaves.
- 30. Serve the salad.
