🥗 Fresh Salad with Beet Greens and Spices

Ingredients
- 250 g beet leaves
- 0.5 tsp mustard seeds
- 0.25 tsp cumin seeds
- 0.25 tsp coriander seeds
- 7 tbsp rapeseed oil
- 3 tbsp red wine vinegar
- 1 lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the beet greens.
- 2. Shake the leaves dry so that no water remains on them.
- 3. Cut the leaves into bite-sized pieces.
- 4. Place the mustard seeds, cumin, and coriander seeds into a dry pan.
- 5. Heat the spices for 1 to 2 minutes until they are fragrant.
- 6. Crush the heated spices in a mortar until they form a fine powder.
- 7. Mix the spice powder with the oil, vinegar, and lemon juice.
- 8. Finally, season the dressing with salt and pepper to taste.
- 9. Place the prepared greens onto the plates.
- 10. Pour the dressing evenly over the salad.
