🥗 Carrot Strip Salad with Yogurt Apple Dressing

Ingredients
- 4 Carrots
- 1 Orange
- 250 g Greek yogurt
- 1 tbsp Honey
- 4 tbsp Apple puree
- 30 g Hazelnut kernels
- 30 g Chopped walnut kernels
- 30 g Pistachio kernels
- 3 tbsp Lemon juice
- Sugar
- Salt
- Pepper (from the mill)
- Watercress (for garnishing)
- Orange segments (for garnishing)
Instructions
- 1. Peel the carrots.
- 2. Use a vegetable peeler to slice the carrots into long, thin strips.
- 3. Peel the orange.
- 4. Dice the orange flesh into small cubes.
- 5. Mix the yogurt with the honey and apple puree in a bowl.
- 6. Roughly chop the nuts and pistachios.
- 7. Add the carrot strips, orange cubes, and chopped nuts to a large bowl.
- 8. Add the lemon juice.
- 9. Toss everything together well.
- 10. Season the salad to taste with sugar, salt, and pepper.
- 11. Divide the salad into individual serving bowls.
- 12. Garnish the salad with fresh watercress.
- 13. Spoon the yogurt-apple dressing into small bowls.
- 14. Decorate the small bowls with orange segments.
- 15. Serve the dressing alongside the salad.
