🍽️ Arctic Char with Sorrel Sauce

Ingredients
- 4 Trout Fillets (175 g each)
- 2 tbsp Lemon Juice
- 2 bunches Sorrel
- Oil
- Salt
- Pepper (from the mill)
- 1 Onion
- 1 Garlic Clove
- 1 tbsp Butter
- 150 ml Fish Stock
- 150 ml Whipping Cream
- Nutmeg
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Rinse the fish fillets under running water.
- 3. Pat the fillets dry with a kitchen towel.
- 4. Drizzle the fillets with lemon juice.
- 5. Let the fillets rest for about 5 to 10 minutes.
- 6. Sort through the sorrel to remove any wilted parts.
- 7. Wash the sorrel thoroughly.
- 8. Let the sorrel drain.
- 9. Pat the fish fillets dry again.
- 10. Brush the fillets lightly with oil.
- 11. Season the fillets with salt and pepper.
- 12. Place the fillets in an ovenproof dish.
- 13. Place the dish on the middle rack of the oven.
- 14. Cook the fish for about 15 to 20 minutes.
- 15. Pay attention to the thickness of the fillets.
- 16. Peel the onion and the garlic.
- 17. Finely chop the onion and the garlic.
- 18. Melt butter in a pan.
- 19. Sauté the onions and garlic until translucent.
- 20. Add the sorrel to the pan.
- 21. Sauté the sorrel briefly.
- 22. Deglaze the mixture with fish stock.
- 23. Pour in the cream.
- 24. Let the sauce simmer gently.
- 25. Puree the sauce until smooth.
- 26. Season the sauce with salt.
- 27. Season the sauce with pepper.
- 28. Season the sauce with nutmeg.
