🍰 Creamy Waffles

Ingredients
- 100 g spelt flour Type 1050
- 150 g whipping cream
- 2 egg yolks
- 0.5 vanilla pod (seeds)
- 0.5 lemon
- 30 g butter (melted)
- 3 egg whites
- 30 g raw cane sugar
- butter (for the waffle iron)
- raw cane powdered sugar
Instructions
- 1. Sift the flour into a bowl. Stir in the cream, egg yolks, vanilla, and butter. Wash the lemon under hot water, grate the zest, and add it to the bowl.
- 2. Beat the egg whites with a pinch of salt and sugar until very stiff. Gently fold the egg whites into the batter. Preheat the waffle iron and grease it with butter.
- 3. Add a few tablespoons of batter to the waffle iron and spread it evenly. Bake the waffles one after the other. Keep them warm in a slightly preheated oven or let them cool on a wire rack.
- 4. Dust the finished waffles with powdered sugar and serve.
