  1. 1. Place the gelatin in a bowl of cold water and let it bloom.
  2. 2. Add the cream, milk, sugar, and the vanilla pod cut lengthwise to a pot.
  3. 3. Bring the mixture to a boil on the stove.
  4. 4. Let the mixture simmer gently for about 10 minutes.
  5. 5. Remove the pot from the heat and take out the vanilla pod.
  6. 6. Squeeze the water out of the soaked gelatin.
  7. 7. Stir the gelatin into the warm cream mixture until it has completely dissolved.
  8. 8. Pour the liquid into four small glasses.
  9. 9. Allow the puddings to cool down.
  10. 10. Place the glasses, covered, in the refrigerator for at least 4 hours until the pudding is firm.
  11. 11. Wash the orange under hot water and dry it.
  12. 12. Peel fine strips from the orange peel (zest).
  13. 13. Peel the orange completely with a sharp knife, ensuring no white pith remains.
  14. 14. Carefully cut out the fruit segments (fillets) between the membranes.
  15. 15. Squeeze the juice from the remaining fruit.
  16. 16. Mix the juice in a bowl with the orange fillets and zest.
  17. 17. Stir the honey into the orange mixture.
  18. 18. Distribute the orange pieces over the pudding portions when serving.
  19. 19. Garnish the dish with fresh mint leaves.
