  1. 1. Whip the cream together with cream stabilizer and vanilla sugar until stiff.
  2. 2. Peel the oranges carefully with a sharp knife, removing the white pith as well.
  3. 3. Cut the fruit segments out of the membranes and catch the juice that escapes.
  4. 4. Squeeze the remaining juice from the orange peels.
  5. 5. Fill narrow, tall glasses alternately with orange segments (soaked in some juice) and the cream.
  6. 6. Garnish the dessert with whole almonds and ground almonds and serve.
