Ingredients
- 8 Herrings
- 40 g Salt (no iodized salt)
- 200 ml Whipping cream
- 1 small bowl Cress
Instructions
- 1. Generously sprinkle the herring fillets with salt.
- 2. Place the salted herring fillets into a container.
- 3. Let the herring fillets sit in the refrigerator for two days.
- 4. Turn the herring fillets occasionally during this time.
- 5. Peel the skin off the herring fillets.
- 6. Carefully remove the small back fins.
- 7. Cut the herring fillets in half lengthwise.
- 8. Remove the central bones using a knife.
- 9. Bring the cream to a boil in a pot.
- 10. Let the boiled cream cool down completely.
- 11. Thoroughly wash the cress under running water.
- 12. Chop the cress into small pieces.
- 13. Mix the cooled cream with the herring fillets.
- 14. Add the chopped cress to the mixture.
- 15. Store the finished dish in the refrigerator.
- 16. The dish keeps for two to three days.
- 17. Garnish the portions with fresh cress just before serving.
