  1. 1. Beat the egg together with the egg yolks using an electric hand mixer until creamy.
  2. 2. Pour 50 milliliters of cold water into a small saucepan with a handle.
  3. 3. Stir the sugar into the water.
  4. 4. Bring the mixture to a boil.
  5. 5. Continue boiling the syrup for about 1 minute.
  6. 6. Immediately stir the hot sugar syrup vigorously into the egg mixture.
  7. 7. Stir in the orange zest and the vanilla seeds.
  8. 8. Place the bowl with the mixture on an ice bath (a larger bowl filled with ice cubes and water).
  9. 9. Continue mixing the mixture with the hand mixer until it is completely cool.
  10. 10. Stir the Amaretto and rum into the cold parfait mixture.
  11. 11. Pluck the petals from the calendula flowers.
  12. 12. Add the lemon juice to the petals.
  13. 13. Stir the petals with the lemon juice into the parfait mixture.
  14. 14. Whip the cream until stiff.
  15. 15. Gently fold the whipped cream into the parfait mixture.
  16. 16. Pour the parfait mixture into a bowl or a pudding mold.
  17. 17. Let the mixture freeze in the freezer for 3 to 4 hours until firm.
  18. 18. Place the mold briefly in hot water before unmolding the parfait.
  19. 19. Unmold the parfait onto a serving plate.
  20. 20. Garnish the parfait with fresh calendula flowers as desired.
