🍽️ Creamy Calendula Parfait

Ingredients
- 1 egg
- 2 egg yolks
- 100 g sugar
- 0.5 tsp grated unpeeled orange peel
- vanilla pods
- 2 tbsp Amaretto
- 1 tbsp white rum
- 2 tbsp lemon juice
- 1 calendula flower
- 500 g whipping cream
Instructions
- 1. Beat the egg together with the egg yolks using an electric hand mixer until creamy.
- 2. Pour 50 milliliters of cold water into a small saucepan with a handle.
- 3. Stir the sugar into the water.
- 4. Bring the mixture to a boil.
- 5. Continue boiling the syrup for about 1 minute.
- 6. Immediately stir the hot sugar syrup vigorously into the egg mixture.
- 7. Stir in the orange zest and the vanilla seeds.
- 8. Place the bowl with the mixture on an ice bath (a larger bowl filled with ice cubes and water).
- 9. Continue mixing the mixture with the hand mixer until it is completely cool.
- 10. Stir the Amaretto and rum into the cold parfait mixture.
- 11. Pluck the petals from the calendula flowers.
- 12. Add the lemon juice to the petals.
- 13. Stir the petals with the lemon juice into the parfait mixture.
- 14. Whip the cream until stiff.
- 15. Gently fold the whipped cream into the parfait mixture.
- 16. Pour the parfait mixture into a bowl or a pudding mold.
- 17. Let the mixture freeze in the freezer for 3 to 4 hours until firm.
- 18. Place the mold briefly in hot water before unmolding the parfait.
- 19. Unmold the parfait onto a serving plate.
- 20. Garnish the parfait with fresh calendula flowers as desired.
