🍽️ Sago Pudding with Jackfruit and Coconut Sauce

Ingredients
- 300 g jackfruit (canned in syrup)
- 50 g sago
- 3 tbsp sugar
- 1 lime (juice and fine zest strips)
- salt
- 100 ml coconut milk (sweetened, canned)
- 1 tbsp cornstarch
Instructions
- 1. Drain the jackfruit pieces in a sieve.
- 2. Collect the juice and measure it.
- 3. Stir in the same amount of water into the juice.
- 4. Bring the diluted liquid to a boil in a pot.
- 5. Stir in the sago pearls.
- 6. Let the mixture simmer on low heat for about 10 minutes.
- 7. Remove the pot from the heat.
- 8. Stir in sugar, lime juice, lime zest, and a pinch of salt.
- 9. Let the cream simmer on low heat for another 5 minutes.
- 10. Slice the jackfruit pieces lengthwise into thin strips.
- 11. Fold the jackfruit strips into the sago cream.
- 12. Divide the mixture among four dessert glasses.
- 13. Bring the coconut milk to a boil in a small pot.
- 14. Mix cornstarch with 2 tablespoons of water to form a smooth paste.
- 15. Stir the starch paste into the boiling coconut milk.
- 16. Let the sauce come to a brief boil until it thickens.
- 17. Pour the warm coconut sauce over the dessert glasses.
- 18. Place the glasses in the refrigerator to cool.
