🥤 Juicy Apple Cake with Almonds and Apple Jelly

Ingredients
- soft butter (for the springform pan)
- soft breadcrumbs (for the springform pan)
- 200 g soft butter
- 200 g sugar
- 1 pinch salt
- 5 eggs
- 2 tsp baking powder
- 150 g ground almond kernels (peeled)
- 250 g flour
- 150 ml milk
- 4 tart apples
- 1 tbsp lemon juice
- 2 tbsp apple jelly
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Grease the springform pan with butter.
- 3. Dust the pan with breadcrumbs.
- 4. Beat the butter with the sugar and a pinch of salt until fluffy.
- 5. Gradually beat in the eggs while continuing to stir.
- 6. Mix the flour with the baking powder and almonds.
- 7. Stir in the flour mixture and the milk alternately into the batter.
- 8. Ensure a smooth, spreadable batter is formed.
- 9. Pour the batter into the pan.
- 10. Smooth the batter.
- 11. Peel the apples.
- 12. Quarter the apples.
- 13. Remove the core.
- 14. Score the apple quarters several times on the curved side.
- 15. Drizzle the apples with lemon juice.
- 16. Place the apples on the batter.
- 17. Press the apples in slightly.
- 18. Bake the cake for approx. 50 minutes until golden brown.
- 19. Perform the skewer test.
- 20. Cover the cake with aluminum foil if it gets too dark.
- 21. Take the cake out of the oven.
- 22. Brush the still warm cake with the jelly.
- 23. Let the cake cool down.
