🥤 Juicy Beef Patties

Ingredients
- 1 shallot
- 2 tbsp chopped parsley
- 2 tbsp chopped basil
- 400 g beef tartare
- 2 tsp chopped thyme
- 2 eggs
- 4 tbsp fine oat flakes
- salt
- pepper (from the mill)
- 2 tbsp olive oil
- 250 ml vegetable broth
- 4 tbsp crème fraîche
- 1 tsp grated lemon zest
Instructions
- 1. Peel the shallot and dice it into very small pieces.
- 2. Add the diced shallots to a bowl along with the herbs, Tatar (a fine minced meat mixture), thyme, eggs, oat flakes, salt, and pepper.
- 3. Knead everything with your hands or a spoon until a homogeneous, smooth dough forms.
- 4. Shape small, hand-sized patties from this mixture.
- 5. Heat some oil in a frying pan.
- 6. Fry the patties on all sides until golden brown and cooked through.
- 7. Remove the finished patties from the pan and keep them warm, for example on a plate covered with foil.
- 8. Deglaze the pan drippings (the caramelized residues on the bottom of the pan) by briefly heating the pan on the stove and pouring in the broth.
- 9. Stir in the crème fraîche until well combined.
- 10. Bring the sauce to a brief boil to let it thicken slightly and become creamy.
- 11. Stir the lemon zest into the finished sauce.
- 12. Serve the juicy beef patties with the warm sauce.
- 13. Spring vegetables or potatoes make excellent side dishes.
