  1. 1. Peel the shallot and dice it into very small pieces.
  2. 2. Add the diced shallots to a bowl along with the herbs, Tatar (a fine minced meat mixture), thyme, eggs, oat flakes, salt, and pepper.
  3. 3. Knead everything with your hands or a spoon until a homogeneous, smooth dough forms.
  4. 4. Shape small, hand-sized patties from this mixture.
  5. 5. Heat some oil in a frying pan.
  6. 6. Fry the patties on all sides until golden brown and cooked through.
  7. 7. Remove the finished patties from the pan and keep them warm, for example on a plate covered with foil.
  8. 8. Deglaze the pan drippings (the caramelized residues on the bottom of the pan) by briefly heating the pan on the stove and pouring in the broth.
  9. 9. Stir in the crème fraîche until well combined.
  10. 10. Bring the sauce to a brief boil to let it thicken slightly and become creamy.
  11. 11. Stir the lemon zest into the finished sauce.
  12. 12. Serve the juicy beef patties with the warm sauce.
  13. 13. Spring vegetables or potatoes make excellent side dishes.
