🥤 Moist Gingerbread with Walnuts

Ingredients
- 120 ml maple syrup
- 450 ml oat drink (oat milk)
- 450 g plum puree (unsweetened)
- 10 g cocoa powder (2 tbsp each; highly defatted)
- 1 pinch salt
- 1.5 tbsp gingerbread spice
- 400 g spelt whole grain flour
- 0.5 tbsp baking soda
- 0.5 packet baking powder
- 42 walnut kernel halves
Instructions
- 1. Whisk the syrup with the oat drink and the prune puree in a bowl.
- 2. Stir in the cocoa powder, the salt, and the gingerbread spice into the liquid mixture.
- 3. Sift the flour together with the baking soda and the baking powder over the wet ingredients.
- 4. Gently fold the dry ingredients in until a smooth dough forms.
- 5. Place the dough on a baking sheet lined with baking paper.
- 6. Smooth the surface of the dough.
- 7. Decorate the surface with the walnut halves.
- 8. Bake the gingerbread in the preheated oven at 180 °C fan-forced for about 20 minutes.
