🥤 Juicy Potato Rolls

Ingredients
- 400 g firm-cooking potatoes
- 0.5 bulb fennel
- 500 g whole wheat flour
- 1 packet dry yeast
- 125 ml milk (3.5% fat)
- 1 tsp whole cane sugar
- 1 bunch chives
- 1 egg
- 1.5 tsp salt
- 1 tsp coriander seeds
- 1 tbsp olive oil
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Peel the potatoes.
- 3. Grate the potatoes coarsely using a box grater.
- 4. Wash the fennel.
- 5. Remove the tough parts of the fennel.
- 6. Grate the fennel coarsely or chop it finely.
- 7. Put the flour into a mixing bowl.
- 8. Add the yeast to the bowl.
- 9. Mix the flour and yeast together.
- 10. Pour the milk into a saucepan.
- 11. Add the sugar to the milk in the saucepan.
- 12. Warm the milk and sugar mixture until lukewarm.
- 13. Add the grated potatoes to the lukewarm milk.
- 14. Add the grated or chopped fennel to the milk.
- 15. Stir the potatoes and fennel into the milk.
- 16. Wash the chives.
- 17. Shake the chives dry.
- 18. Cut the chives into fine rings.
- 19. Add the flour to the bowl with the potato-fennel-milk mixture.
- 20. Add the egg to the bowl.
- 21. Add the salt to the bowl.
- 22. Add the coriander seeds to the bowl.
- 23. Add the olive oil to the bowl.
- 24. Mix all ingredients using the dough hooks of a hand mixer.
- 25. Process the ingredients into a smooth dough.
- 26. Knead the chives into the dough.
- 27. Cover the bowl with the dough.
- 28. Place the bowl in a warm spot.
- 29. Let the dough rise for about 30 minutes.
- 30. Wait until the volume of the dough has visibly increased.
- 31. Sprinkle some flour on the work surface.
- 32. Knead the dough through again on the floured surface.
- 33. Sprinkle some flour on your hands.
- 34. Shape 15 equal-sized balls from the dough.
- 35. Line a baking tray with baking paper.
- 36. Place the dough balls on the baking tray.
- 37. Cover the rolls.
- 38. Let the rolls rise for another 15 minutes.
- 39. Preheat the oven.
- 40. Set the oven to 220 °C.
- 41. Use 200 °C for fan-assisted (convection) cooking.
- 42. Use gas mark 3 to 4.
- 43. Bake the rolls for 10 minutes initially.
- 44. Reduce the temperature to 180 °C.
- 45. Use 160 °C for fan-assisted (convection) cooking.
- 46. Use gas mark 3.
- 47. Finish baking the rolls for about 15 minutes.
