🥤 Juicy Chicken Drumstick with Herb Sauce

Ingredients
- 1 onion
- 1 carrot
- 150 g celeriac
- 1 clove of garlic
- 1 bay leaf
- 1 sprig rosemary
- 4 chicken drumsticks
- 1 onion
- 1 garlic
- 2 tbsp butter
- 1 tbsp flour
- 150 ml dry white wine
- 1 handful freshly chopped herbs (e.g. chervil and parsley)
- 100 g crème fraîche
- 2 tbsp chopped almond kernels
- 1 tbsp lemon juice
- salt
- pepper (from the mill)

Instructions
- 1. Peel the onion, the carrot, the celery, and the garlic.
- 2. Cut the vegetables and the garlic into small cubes.
- 3. Put the cubes into a pot.
- 4. Pour about 1.5 liters of water into the pot.
- 5. Add the bay leaf and the rosemary to the water.
- 6. Bring the mixture to a boil.
- 7. Rinse the chicken drumsticks under running water.
- 8. Pat the drumsticks dry with a kitchen towel.
- 9. Remove the skin from the chicken drumsticks.
- 10. Place the drumsticks into the hot water.
- 11. Reduce the heat so that the water is no longer boiling.
- 12. Let the drumsticks cook in the warm water for about 40 minutes.
- 13. Peel the onion and the garlic for the sauce.
- 14. Dice the onion and the garlic very finely.
- 15. Heat butter in a frying pan.
- 16. Sauté the onions and garlic in the hot butter until translucent.
- 17. Stir the flour into the onions.
- 18. Deglaze the pan with wine.
- 19. Take about 200 milliliters of the chicken broth.
- 20. Add the broth to the wine-flour mixture.
- 21. Let the sauce simmer lightly for about 10 minutes.
- 22. Remove the pan from the heat.
- 23. Stir in the herbs, the crème fraîche, and the almonds.
- 24. Season the sauce with lemon juice, salt, and pepper.
- 25. Remove the chicken drumsticks from the broth.
- 26. Let the drumsticks drain.
- 27. Place the drumsticks on a plate.
- 28. Pour some sauce over the drumsticks.
- 29. Serve the rest of the sauce separately.
- 30. Garnish the dish with lemon slices and chervil.
- 31. Serve the chicken drumsticks.
