  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into small cubes.
  3. 3. Place the potato pieces in a pot with boiling water.
  4. 4. Cook the potatoes over medium heat for about 15 minutes until tender.
  5. 5. Drain the cooking water.
  6. 6. Let the potatoes cool for 10 minutes.
  7. 7. Slice the vanilla pod lengthwise.
  8. 8. Scrape out the vanilla seeds with a knife.
  9. 9. Rinse half of the lemon under hot water.
  10. 10. Dry the lemon.
  11. 11. Grate the lemon zest finely.
  12. 12. Press the cooled potatoes through a potato ricer into a bowl.
  13. 13. Add the vanilla seeds to the potato mixture.
  14. 14. Add the lemon zest.
  15. 15. Add the quark.
  16. 16. Add the sugar.
  17. 17. Add the raisins.
  18. 18. Add the flour.
  19. 19. Add the egg.
  20. 20. Add a pinch of salt.
  21. 21. Knead all ingredients into a smooth dough.
  22. 22. Check the consistency of the dough.
  23. 23. If the dough is too wet, add a little more flour.
  24. 24. Shape 12 small cookies from the dough.
  25. 25. Wash the apples.
  26. 26. Peel the apples.
  27. 27. Remove the core of the apples.
  28. 28. Chop the apples finely.
  29. 29. Peel the ginger.
  30. 30. Chop the ginger finely.
  31. 31. Heat 1 teaspoon of butter in a pot.
  32. 32. Add the apples, ginger, and cinnamon to the pot.
  33. 33. Sauté the mixture for 2–3 minutes over medium heat.
  34. 34. Drizzle the apples with honey.
  35. 35. Let the apples caramelize.
  36. 36. Add 100 ml of water.
  37. 37. Cook the apples for about 7 minutes until soft.
  38. 38. Puree the apple mixture finely.
  39. 39. Heat 1 teaspoon of butter in a pan.
  40. 40. Place 4 quark balls in the pan.
  41. 41. Fry the balls over medium heat for about 3–4 minutes per side until golden brown.
  42. 42. Fry the remaining balls in the same way.
  43. 43. Serve the quark balls with the apple sauce.
