🍽️ Saxon Quark Balls

Ingredients
- 700 g starchy potatoes
- 0.5 vanilla pod
- 0.5 organic lemon
- 250 g low-fat quark
- 50 g raw cane sugar
- 2 tbsp raisins
- 150 g spelt wholemeal flour
- 1 egg
- salt
- 2 apples
- 20 g ginger
- 20 g butter
- 0.25 tsp cinnamon powder
- 1 tbsp honey
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Place the potato pieces in a pot with boiling water.
- 4. Cook the potatoes over medium heat for about 15 minutes until tender.
- 5. Drain the cooking water.
- 6. Let the potatoes cool for 10 minutes.
- 7. Slice the vanilla pod lengthwise.
- 8. Scrape out the vanilla seeds with a knife.
- 9. Rinse half of the lemon under hot water.
- 10. Dry the lemon.
- 11. Grate the lemon zest finely.
- 12. Press the cooled potatoes through a potato ricer into a bowl.
- 13. Add the vanilla seeds to the potato mixture.
- 14. Add the lemon zest.
- 15. Add the quark.
- 16. Add the sugar.
- 17. Add the raisins.
- 18. Add the flour.
- 19. Add the egg.
- 20. Add a pinch of salt.
- 21. Knead all ingredients into a smooth dough.
- 22. Check the consistency of the dough.
- 23. If the dough is too wet, add a little more flour.
- 24. Shape 12 small cookies from the dough.
- 25. Wash the apples.
- 26. Peel the apples.
- 27. Remove the core of the apples.
- 28. Chop the apples finely.
- 29. Peel the ginger.
- 30. Chop the ginger finely.
- 31. Heat 1 teaspoon of butter in a pot.
- 32. Add the apples, ginger, and cinnamon to the pot.
- 33. Sauté the mixture for 2–3 minutes over medium heat.
- 34. Drizzle the apples with honey.
- 35. Let the apples caramelize.
- 36. Add 100 ml of water.
- 37. Cook the apples for about 7 minutes until soft.
- 38. Puree the apple mixture finely.
- 39. Heat 1 teaspoon of butter in a pan.
- 40. Place 4 quark balls in the pan.
- 41. Fry the balls over medium heat for about 3–4 minutes per side until golden brown.
- 42. Fry the remaining balls in the same way.
- 43. Serve the quark balls with the apple sauce.
