  2. 2. Melt the cubes in a pot over medium heat.
  3. 3. Continue frying until the fat is clear and the solid remnants (cracklings) are golden brown.
  4. 4. Pour the liquid fat through a sieve into a bowl.
  5. 5. Let the cracklings drain well in the sieve.
  6. 6. Peel the onions and cut them in half.
  7. 7. Slice the onion halves into thin slices.
  8. 8. Peel the apple and cut it into quarters.
  9. 9. Remove the core from the apple quarters.
  10. 10. Slice the apple pieces into thin slices.
  11. 11. Add some of the prepared fat to a frying pan.
  12. 12. Fry the onion and apple slices until golden yellow.
  13. 13. Season the mixture with salt, pepper, and marjoram.
  14. 14. Add the remaining fat, a bay leaf, and allspice berries.
  15. 15. Let the ingredients simmer for another 5 minutes.
  16. 16. Transfer the mixture into a container.
  17. 17. Let the container stand undisturbed for at least 2 days.
  18. 18. Clean the spring onions and wash them.
  19. 19. Shake the onions dry.
  20. 20. Cut the spring onions in half lengthwise or into thirds.
  21. 21. Add sugar and 2 tablespoons of water to a pot.
  22. 22. Caramelize the sugar while stirring.
  23. 23. Deglaze the caramel with vinegar and 200 milliliters of water.
  24. 24. Season the liquid with salt, allspice, and cinnamon.
  25. 25. Add the spring onions to the liquid.
  26. 26. Simmer the onions for 10 to 12 minutes.
  27. 27. Fill the onions along with the cooking liquid into prepared jars.
  28. 28. Seal the jars tightly.
  29. 29. Let the jars cool down.
  30. 30. Spread the goose fat onto the bread slices.
  31. 31. Top the bread with the caramelized onions.
  32. 32. Garnish the dish with fresh marjoram.
  33. 33. Serve the bread immediately.
