🍽️ Crispy Russian Lard Pastry Loops

Ingredients
- 200 g flour
- 3 egg yolks
- 3 tbsp whipping cream
- 1 tsp baking powder
- 1 pinch salt
- 2 tbsp vodka
- flour (for working)
- lard (for frying)
Instructions
- 1. Sift the flour into a large bowl.
- 2. Add the egg yolks, the cream, the baking powder, the salt, and the vodka.
- 3. Knead everything into a firm and pliable dough.
- 4. Dust your work surface with some flour.
- 5. Roll out the dough thinly.
- 6. Cut the dough into strips of about 2 by 12 centimeters using a pastry wheel.
- 7. Make a longitudinal cut in the middle of each strip.
- 8. Pull one end of the dough through the opening to form a loop.
- 9. Heat the lard to about 170 degrees Celsius.
- 10. Fry the loops in batches in the hot fat.
- 11. Cook them for 2 to 3 minutes until they are golden brown.
- 12. Let the excess fat drain on kitchen paper.
- 13. Serve the pastries immediately.
