🍽️ Juicy Rump Steak with Sweet and Sour Red Wine Onions

Ingredients
- 400 g red onions
- 4 rumpsteaks (à 180 g)
- salt
- pepper
- 2 tbsp oil
- 40 g butter
- 1-2 tbsp sugar
- 500 ml red wine
- 1 sprig rosemary
Instructions
- 1. Peel the onions and cut them in half.
- 2. Cut the onion halves into thin strips.
- 3. Season the steaks generously with salt and pepper on both sides.
- 4. Heat oil in a pan until it is hot.
- 5. Sear the steaks in the hot oil for about 2 to 3 minutes on each side.
- 6. Preheat the oven to 100 degrees Celsius and insert the rack.
- 7. Place the seared steaks on the hot rack in the oven.
- 8. Let the steaks rest in the oven for 20 minutes.
- 9. Add the butter to the pan drippings and let it foam.
- 10. Add the onion slices to the pan and sauté them until they are soft and translucent.
- 11. Sprinkle sugar over the onions.
- 12. Deglaze the pan with red wine.
- 13. Season the onion sauce with salt and pepper.
- 14. Simmer the sauce over medium heat for 6 to 8 minutes to reduce.
- 15. Finely chop the rosemary.
- 16. Stir the chopped rosemary into the sauce.
- 17. Take the steaks out of the oven.
- 18. Serve the steaks with the red wine onions on the plate.
