  2. 2. Cut the onion halves into thin strips.
  3. 3. Season the steaks generously with salt and pepper on both sides.
  4. 4. Heat oil in a pan until it is hot.
  5. 5. Sear the steaks in the hot oil for about 2 to 3 minutes on each side.
  6. 6. Preheat the oven to 100 degrees Celsius and insert the rack.
  7. 7. Place the seared steaks on the hot rack in the oven.
  8. 8. Let the steaks rest in the oven for 20 minutes.
  9. 9. Add the butter to the pan drippings and let it foam.
  10. 10. Add the onion slices to the pan and sauté them until they are soft and translucent.
  11. 11. Sprinkle sugar over the onions.
  12. 12. Deglaze the pan with red wine.
  13. 13. Season the onion sauce with salt and pepper.
  14. 14. Simmer the sauce over medium heat for 6 to 8 minutes to reduce.
  15. 15. Finely chop the rosemary.
  16. 16. Stir the chopped rosemary into the sauce.
  17. 17. Take the steaks out of the oven.
  18. 18. Serve the steaks with the red wine onions on the plate.
