Ingredients
- 3 Eggs
- 100 ml Rapeseed oil
- 100 g Sugar
- 200 g Apple puree (no sugar)
- 30 g Soy flour (2 tbsp)
- 300 g Spelt flour (Type 630)
- 0.5 packet Baking powder
- 100 ml Buttermilk
Instructions
- 1. Add the eggs, oil, sugar, apple sauce, and soy flour to a large mixing bowl.
- 2. Beat the ingredients with a hand mixer until the sugar is completely dissolved.
- 3. Mix the spelt flour and baking powder in a separate bowl.
- 4. Sift the flour mixture over the wet ingredients in the mixing bowl.
- 5. Pour in the buttermilk and stir everything into a smooth batter.
- 6. If the batter seems too runny, stir in 1 to 2 tablespoons of additional flour.
- 7. Stir in nuts, dried fruits, or chocolate chips as desired.
