🍽️ The Perfect Beginner's Sponge Cake Batter

Ingredients
- 0.5 vanilla pod
- 1 organic lemon
- 250 g butter
- 120 g raw cane sugar
- 1 pinch salt
- 4 eggs
- 300 g spelt flour Type 1050
- 1 packet baking powder
- 3 tbsp milk (3.5% fat)
Instructions
- 1. Cut the vanilla pod in half lengthwise.
- 2. Scrape out the tiny seeds with a knife.
- 3. Wash the lemon thoroughly.
- 4. Pat the lemon dry.
- 5. Grate one teaspoon of the zest.
- 6. Take a large bowl.
- 7. Beat the butter with an electric mixer until creamy and fluffy.
- 8. Gradually add the sugar.
- 9. Add the salt.
- 10. Continue mixing until the mixture is firm and smooth.
- 11. Add the eggs to the bowl.
- 12. Add the milk.
- 13. Add the vanilla seeds.
- 14. Add the lemon zest.
- 15. Mix everything well.
- 16. Combine the flour with the baking powder.
- 17. Add the flour mixture to the batter.
- 18. Stir the remaining milk into the batter.
- 19. Add the vanilla paste.
- 20. Add the remaining lemon zest.
- 21. Line a springform pan with baking paper.
- 22. Pour the batter into the prepared pan.
- 23. Smooth the top.
- 24. Preheat the oven to 180 degrees Celsius conventional heat.
- 25. Bake the cake for 50 to 60 minutes until golden brown.
- 26. Let the cake cool in the pan for ten minutes.
- 27. Carefully release the cake from the sides of the pan.
- 28. Remove the cake from the pan.
- 29. Let the cake cool completely on a wire rack.
