🍰 Fluffy Apple Jam Cake

Ingredients
- 250 g flour
- 125 g butter
- 1 packet vanilla sugar
- 3 eggs (size L)
- 1 pinch salt
- 3 tsp baking powder
- 90 g sugar
- 125 ml milk
- 1 tart apple (e.g. Boskop, Gravensteiner.. )
- 250 g freshly cooked jam (e.g. redcurrant jam, cranberry jam or cherry jam to your liking)
Instructions
- 1. Beat the butter and sugar with the electric hand mixer until the mixture is airy and foamy.
- 2. Add the eggs and a pinch of salt to the butter mixture and mix everything well.
- 3. Mix the flour with the baking powder in a separate bowl.
- 4. Stir the flour mixture and the milk alternately into the butter mixture until a smooth batter forms.
- 5. If the batter seems too thick, stir in a little more milk gradually until it is smooth.
- 6. Peel the apple, cut it in half, and remove the core.
- 7. Slice the apple flesh into very thin slices.
- 8. Heat the jam in a small saucepan together with three tablespoons of water until it becomes more liquid.
- 9. Grease the springform pan thoroughly with butter.
- 10. Place four to five tablespoons of the liquid jam in the center of the pan.
- 11. Put half of the batter into the pan and spread it smooth.
- 12. Distribute the apple slices evenly over the batter.
- 13. Add the remaining batter over the apples and spread it smooth.
- 14. Distribute the remaining four to five tablespoons of jam over the surface of the cake.
- 15. Preheat the oven to 160 degrees Celsius fan-forced.
- 16. Place the pan in the preheated oven.
- 17. Bake the cake for 40 minutes until it is golden brown.
- 18. Perform the skewer test by inserting a wooden skewer into the center; it must come out clean.
- 19. Carefully loosen the cake from the pan wall immediately.
- 20. Turn the cake out onto a plate and let it cool completely.
