🍰 Butter cake with cherry meringue topping

Ingredients
- 80 g Butter
- 70 g Sugar
- Orange flavor (a few drops each)
- 1 pinch Salt
- 2 Eggs
- 200 g Flour
- 1 heaped tsp Baking powder
- 2 tbsp Milk
- 750 g Sour cherries
- 3 Egg whites
- 60 g Powdered sugar
- Baking paper (for the pan)
Instructions
- 1. Preheat the oven to 200 degrees.
- 2. Beat butter, sugar, baking flavoring, and salt until fluffy.
- 3. Beat in the eggs one by one.
- 4. Mix flour and baking powder.
- 5. Fold in the flour mixture in two batches.
- 6. Add enough milk to create a creamy batter.
- 7. Line the springform pan with baking paper.
- 8. Pour in the batter and smooth the surface.
- 9. Bake the cake at 200 degrees for about 35 minutes until light brown.
- 10. Wash the cherries and let them drain.
- 11. Pit the cherries.
- 12. Beat the egg whites until half stiff.
- 13. Slowly add the powdered sugar.
- 14. Continue beating until the egg whites are glossy.
- 15. Fold the cherries into the egg whites.
- 16. Remove the cake from the oven.
- 17. Spread the cherry-egg white mixture on top.
- 18. Bake the cake under the highest broil setting or under the grill.
- 19. Bake until the egg whites turn golden brown.
