Ingredients
- 4 eggs
- 40 ml milk
- salt (white pepper)
- nutmeg
- 1 tsp grated lemon zest
- butter (for frying)
- chive rolls
- 4 slices toast bread
- 50 g Avruga caviar
Instructions
- 1. Carefully crack the eggs.
- 2. Rinse the empty eggshells with hot water.
- 3. Let the shells drain.
- 4. Set the shells aside to refill them later.
- 5. Whisk the eggs in a bowl with milk.
- 6. Season the mixture with salt, pepper, nutmeg, and lemon zest.
- 7. Heat some butter in a pan.
- 8. Pour the egg mixture into the pan.
- 9. Stir the egg gently until it is set.
- 10. Fill the scrambled eggs into the prepared eggshells.
- 11. Garnish the dish with chive rolls as desired.
- 12. Toast the bread slices.
- 13. Spread caviar on the toast slices.
- 14. Serve the scrambled eggs together with the caviar toast.
