🍽️ Teltow-style Turnip Stew with Beef Fillet

Ingredients
- 700 g Teltow turnips
- 20 g dried porcini mushrooms
- 3 tbsp butter
- 1 tbsp sugar
- 250 ml beef stock
- salt
- pepper (freshly ground)
- 350 g beef fillet
- 3 shallots
- 1 tbsp oil
- 120 g sour cream
- 1 tbsp flour
- 500 g waxy potatoes
- 1 tsp salt
- 0.5 bunch parsley
Instructions
- 1. Preheat the oven to 75 degrees Celsius.
- 2. Wash the turnips, peel them, and cut them in half.
- 3. Place the porcini mushrooms in a bowl and cover them with one cup of hot water to soak.
- 4. Heat half of the butter in a pot.
- 5. Add the turnips to the pot and sprinkle them with sugar.
- 6. Caramelize the turnips over gentle heat.
- 7. Pour in half of the meat broth.
- 8. Season with salt and pepper.
- 9. Simmer the turnips covered over low heat for about 30 minutes.
- 10. Wash the beef fillet and pat it dry with kitchen paper.
- 11. Cut the fillet into finger-thick strips.
- 12. Peel the shallots and dice them finely.
- 13. Remove the porcini mushrooms from the water and let them drain well.
- 14. Heat the remaining butter together with the oil in a frying pan.
- 15. Sear the fillet strips over high heat.
- 16. Remove the meat strips from the pan.
- 17. Keep the meat strips warm in the oven.
- 18. Fry the drained mushrooms and shallots in the remaining fat.
- 19. Pour in the mushroom soaking liquid and the remaining meat broth.
- 20. Reduce the sauce by boiling it vigorously.
- 21. Whisk the cream with the flour in a small bowl.
- 22. Add the cream-flour mixture to the sauce.
- 23. Bring the sauce to a brief boil.
- 24. Add the warm meat strips and the braised turnips to the sauce.
- 25. Adjust the seasoning of the dish with salt and pepper.
- 26. Peel the potatoes for the boiled potatoes.
- 27. Place the potatoes in 500 milliliters of salted water.
- 28. Cook the potatoes covered for about 20 minutes.
- 29. Drain the cooking water.
- 30. Wash the parsley and shake it dry.
- 31. Finely chop the parsley leaves.
- 32. Sprinkle the parsley over the boiled potatoes.
