  2. 2. Wash the turnips, peel them, and cut them in half.
  3. 3. Place the porcini mushrooms in a bowl and cover them with one cup of hot water to soak.
  4. 4. Heat half of the butter in a pot.
  5. 5. Add the turnips to the pot and sprinkle them with sugar.
  6. 6. Caramelize the turnips over gentle heat.
  7. 7. Pour in half of the meat broth.
  8. 8. Season with salt and pepper.
  9. 9. Simmer the turnips covered over low heat for about 30 minutes.
  10. 10. Wash the beef fillet and pat it dry with kitchen paper.
  11. 11. Cut the fillet into finger-thick strips.
  12. 12. Peel the shallots and dice them finely.
  13. 13. Remove the porcini mushrooms from the water and let them drain well.
  14. 14. Heat the remaining butter together with the oil in a frying pan.
  15. 15. Sear the fillet strips over high heat.
  16. 16. Remove the meat strips from the pan.
  17. 17. Keep the meat strips warm in the oven.
  18. 18. Fry the drained mushrooms and shallots in the remaining fat.
  19. 19. Pour in the mushroom soaking liquid and the remaining meat broth.
  20. 20. Reduce the sauce by boiling it vigorously.
  21. 21. Whisk the cream with the flour in a small bowl.
  22. 22. Add the cream-flour mixture to the sauce.
  23. 23. Bring the sauce to a brief boil.
  24. 24. Add the warm meat strips and the braised turnips to the sauce.
  25. 25. Adjust the seasoning of the dish with salt and pepper.
  26. 26. Peel the potatoes for the boiled potatoes.
  27. 27. Place the potatoes in 500 milliliters of salted water.
  28. 28. Cook the potatoes covered for about 20 minutes.
  29. 29. Drain the cooking water.
  30. 30. Wash the parsley and shake it dry.
  31. 31. Finely chop the parsley leaves.
  32. 32. Sprinkle the parsley over the boiled potatoes.
