🍽️ Fresh Arugula Salad with Smoked Salmon and Goat Cheese

Ingredients
- 100 g Lollo biondo
- 200 g arugula
- 1 red onion
- 50 g dried tomatoes (preserved in oil)
- 200 g smoked salmon
- 200 g goat cheese
- 4 tbsp white balsamic vinegar
- 4 tbsp olive oil
- 1 tbsp capers
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the leaf salads under running water.
- 2. Remove tough stems and damaged leaves.
- 3. Tear the leaves into bite-sized pieces if necessary.
- 4. Peel the onion and remove the outer layers.
- 5. Cut the onion in half.
- 6. Cut the onion halves into thin strips.
- 7. Wash the tomatoes and dry them thoroughly.
- 8. Cut the tomatoes into coarse cubes.
- 9. Distribute the prepared salad onto plates or bowls.
- 10. Sprinkle the onion strips over the salad.
- 11. Add the chopped tomatoes.
- 12. Place the slices of smoked salmon on the salad.
- 13. Crumble the goat fresh cheese over the salmon.
- 14. Drizzle balsamic vinegar over the dish.
- 15. Add some olive oil.
- 16. Sprinkle the capers over it.
- 17. Grind fresh black pepper over it.
- 18. Serve the salad immediately.
