🍽️ Fresh Arugula Salad with Feta and Orange

Ingredients
- 100 g Arugula
- 2 Oranges
- 2 tbsp Pine nuts (à 15 g)
- 150 g Feta (45 % fat in dry matter)
- 3 tbsp Olive oil
- 2 tsp Mustard
- 1 tsp Honey
- 1 tbsp White wine vinegar
- Salt
- Pepper
Instructions
- 1. Wash the arugula thoroughly.
- 2. Spin the arugula dry.
- 3. Peel the orange generously.
- 4. Cut out the orange fillets between the membranes.
- 5. Heat a pan over medium heat.
- 6. Roast the pine nuts until golden brown for 2 to 3 minutes.
- 7. Crumble the feta roughly.
- 8. Place the arugula in a bowl.
- 9. Add the orange fillets.
- 10. Add the feta.
- 11. Add the pine nuts.
- 12. Whisk the olive oil with the mustard.
- 13. Add the honey to the dressing.
- 14. Add the vinegar to the dressing.
- 15. Season the dressing with salt.
- 16. Season the dressing with pepper.
- 17. Drizzle the dressing over the salad.
- 18. Toss the salad gently.
- 19. Serve the salad.
