🍽️ Fresh arugula salad with borage flowers

Ingredients
- 200 g mixed salad leaves (e.g. frisée, arugula, head lettuce...)
- 20 capers
- 1 handful borage flowers
- juice of one lemon
- 6 tbsp rapeseed oil
- 1 tsp mustard
- 0.5 tsp sugar
- salt
- pepper (from the mill)
- 1 lemon
Instructions
- 1. Wash the arugula thoroughly, remove any wilted leaves, and spin it dry. Tear the leaves into bite-sized pieces if necessary. Wash the lemon under hot water and cut it into small cubes.
- 2. Whisk the lemon juice in a small bowl with the oil, the mustard, the sugar, the salt, and the pepper until everything is well combined.
- 3. Toss the salad leaves and the lemon cubes with the dressing in a large bowl. Divide the salad onto the plates, sprinkle the capers over it, and decorate the whole thing with the borage flowers.
