  1. 1. Wash the arugula thoroughly, remove any wilted leaves, and spin it dry. Tear the leaves into bite-sized pieces if necessary. Wash the lemon under hot water and cut it into small cubes.
  2. 2. Whisk the lemon juice in a small bowl with the oil, the mustard, the sugar, the salt, and the pepper until everything is well combined.
  3. 3. Toss the salad leaves and the lemon cubes with the dressing in a large bowl. Divide the salad onto the plates, sprinkle the capers over it, and decorate the whole thing with the borage flowers.
