🍽️ Cold Arugula Soup with Orange Garnish

Ingredients
- 2 bunches arugula (approx. 30 g each)
- 1 bunch spring onions
- 2 cloves garlic
- 5 tbsp orange juice
- 600 ml vegetable broth
- 400 g plain yogurt
- 100 g crème fraîche
- salt
- pepper (from the mill)
- 1 tbsp orange zest
Instructions
- 1. Wash the arugula thoroughly and shake it dry so no water droplets remain.
- 2. Rinse the spring onions, trim off the tough ends, and slice them into thin rings.
- 3. Peel the garlic clove and set it aside.
- 4. Place the arugula, spring onion rings, garlic, orange juice, and vegetable broth into a blender.
- 5. Blend the ingredients with the mixer until a fine, smooth mixture forms.
- 6. Add the yogurt and crème fraîche (a sour cream) to the soup.
- 7. Mix everything again with the mixer until the ingredients are fully combined.
- 8. Season the soup to taste with salt and black pepper.
- 9. Pour the cold soup into small bowls.
- 10. Sprinkle the soup with orange zest (the fine peel of the orange) and serve immediately.
