Ingredients
- 1 bunch arugula
- 3 tbsp lemon juice
- 1 tbsp lemon zest
- 250 butter
- salt
- pepper (from the mill)
Instructions
- 1. Wash the arugula thoroughly, remove any damaged or yellow leaves, and dry it well using a salad spinner. Trim off any thick or woody stems if necessary.
- 2. Finely chop the arugula using a large knife. Then mix it thoroughly with the softened butter, lemon juice, lemon zest, salt, and pepper until well combined.
- 3. Shape the mixture into a firm log, wrap it tightly in aluminum foil, and place it in the refrigerator. Slice the butter into thick rounds before serving.
