🥗 Arugula Asparagus Salad

Ingredients
- 1 kg green asparagus
- salt
- 8 pickled chili peppers
- 100 g green olives
- 200 g arugula
- 4 tbsp balsamic vinegar
- 2 tbsp lemon juice
- 1 tsp sweet mustard
- 2 tsp honey
- 4 tbsp olive oil
- pepper from the mill
- 2 tbsp fresh parmesan
Instructions
- 1. Cut off the bottom ends of the asparagus and peel it if necessary. Put the asparagus in boiling salted water and cook it for 4 to 5 minutes until it is firm to the bite. Rinse the asparagus under cold water and cut it in half lengthwise.
- 2. Cut the peppers in half lengthwise. Slice the olives. Clean the arugula, wash it, and spin it dry.
- 3. Arrange the salad ingredients on plates. Whisk together vinegar, lemon juice, mustard, and honey. Stir in the olive oil. Season with salt and pepper and drizzle the dressing over the salad. Sprinkle the Parmesan cheese on top.
