🍽️ Fresh Arugula and Peach Salad

Ingredients
- 250 g Arugula
- 2 Peaches (or Nectarines)
- 2 balls Mozzarella (approx. 125 g each)
- 2 tbsp white balsamic vinegar
- 0.5 Lemon (juice)
- 1 tsp liquid honey
- 5 tbsp olive oil
- Salt
- Pepper (from the mill)
Instructions
- 1. Thoroughly wash the arugula under cold water.
- 2. Spin the greens dry or pat them with a kitchen towel.
- 3. Tear the arugula leaves into bite-sized pieces if necessary.
- 4. Wash the peaches and rub them dry.
- 5. Halve the peaches and remove the pits.
- 6. Cut the peach halves into thin wedges.
- 7. Drain the mozzarella.
- 8. Crumble the mozzarella into small pieces using your hands.
- 9. Mix the arugula, peach wedges, and mozzarella together in a large bowl.
- 10. Divide the salad mixture evenly onto four deep plates.
- 11. Whisk the vinegar, lemon juice, honey, oil, salt, and pepper together in a small bowl.
- 12. Taste the dressing and adjust the seasoning if necessary.
- 13. Drizzle the dressing evenly over the salads.
- 14. Serve the salad immediately.
