  2. 2. Dry the greens well, for example in a salad spinner.
  3. 3. Remove all thick stems from the arugula.
  4. 4. Chop the arugula very finely.
  5. 5. Put the mustard seeds into a mortar.
  6. 6. Crush the mustard seeds coarsely.
  7. 7. Add the finely chopped arugula to the crushed mustard.
  8. 8. Add the oil.
  9. 9. Grind everything together into a smooth paste in the mortar.
  10. 10. Stir the vegetable broth into the paste.
