🥗 Fresh Arugula and Tarragon Salad with Marinated Onions

Ingredients
- 4 red onions
- 2 tbsp white vinegar
- 400 g arugula
- 1 large bunch tarragon (4 handfuls)
- 250 g seedless red grapes
- 200 g Alpro yogurt (Alternative plain)
- salt (, pepper)
- 3 tbsp olive oil
Instructions
- 1. Peel the onions and cut them into very small cubes.
- 2. Pour the vinegar over the onion cubes.
- 3. Let the onions sit for about 15 minutes.
- 4. The onions will become milder and turn red.
- 5. Wash the arugula and remove the tough stems.
- 6. Dry the greens thoroughly, either in a salad spinner or by letting them drain.
- 7. Wash the tarragon and shake it dry.
- 8. Pluck the tarragon leaves from the stems.
- 9. Wash the grapes thoroughly.
- 10. Halve the grapes.
- 11. Place the plain yogurt alternative into a bowl.
- 12. Season the yogurt base with salt, pepper, olive oil, and a spoonful of the onion vinegar.
- 13. Add the arugula, tarragon leaves, grapes, and marinated onions into a large bowl.
- 14. Pour the yogurt sauce over the vegetables.
- 15. Toss everything gently together.
- 16. Divide the salad onto four plates.
- 17. Adjust the seasoning of the portions with salt and pepper if needed.
