  1. 1. Peel the onions and cut them into very small cubes.
  2. 2. Pour the vinegar over the onion cubes.
  3. 3. Let the onions sit for about 15 minutes.
  4. 4. The onions will become milder and turn red.
  5. 5. Wash the arugula and remove the tough stems.
  6. 6. Dry the greens thoroughly, either in a salad spinner or by letting them drain.
  7. 7. Wash the tarragon and shake it dry.
  8. 8. Pluck the tarragon leaves from the stems.
  9. 9. Wash the grapes thoroughly.
  10. 10. Halve the grapes.
  11. 11. Place the plain yogurt alternative into a bowl.
  12. 12. Season the yogurt base with salt, pepper, olive oil, and a spoonful of the onion vinegar.
  13. 13. Add the arugula, tarragon leaves, grapes, and marinated onions into a large bowl.
  14. 14. Pour the yogurt sauce over the vegetables.
  15. 15. Toss everything gently together.
  16. 16. Divide the salad onto four plates.
  17. 17. Adjust the seasoning of the portions with salt and pepper if needed.
