🥗 Fruity Arugula Apple Salad with Walnuts

Ingredients
- 180 g arugula (approx. 150 - 1 bunch)
- 40 g roughly chopped walnut kernels
- 60 g Pecorino (in a block)
- 2 tart apples
- 1 lemon (juiced)
- 2 tbsp white wine vinegar
- 0.25 tsp mustard
- 1 pinch sugar
- salt
- pepper (from a mill)
- 3 tbsp seed oil
- 1 tbsp walnut oil
Instructions
- 1. Wash the arugula thoroughly under running water.
- 2. Remove any wilted or damaged leaves.
- 3. Spin the greens dry or pat them gently with a kitchen towel.
- 4. Remove tough stems, if present.
- 5. Cut the apples into four equal quarters.
- 6. Peel the apple quarters completely.
- 7. Remove the core from each piece.
- 8. Slice the apples into very thin wedges.
- 9. Drizzle the apple wedges immediately with lemon juice to prevent browning.
- 10. Put the vinegar, mustard, sugar, salt, and pepper into a bowl.
- 11. Whisk these ingredients together well.
- 12. Add the oil gradually.
- 13. Beat the oil in with a whisk until the sauce is creamy.
- 14. Finally, adjust the dressing to taste with salt and pepper.
- 15. Put the arugula and apple wedges into a large bowl.
- 16. Pour the salad dressing over them.
- 17. Toss everything gently until everything is evenly coated.
- 18. Distribute the salad onto the plates.
- 19. Sprinkle the walnuts generously over the top.
- 20. Shave the Pecorino cheese over the salad using a vegetable peeler or truffle shaver.
