  1. 1. Wash the arugula thoroughly under running water.
  2. 2. Remove any wilted or damaged leaves.
  3. 3. Spin the greens dry or pat them gently with a kitchen towel.
  4. 4. Remove tough stems, if present.
  5. 5. Cut the apples into four equal quarters.
  6. 6. Peel the apple quarters completely.
  7. 7. Remove the core from each piece.
  8. 8. Slice the apples into very thin wedges.
  9. 9. Drizzle the apple wedges immediately with lemon juice to prevent browning.
  10. 10. Put the vinegar, mustard, sugar, salt, and pepper into a bowl.
  11. 11. Whisk these ingredients together well.
  12. 12. Add the oil gradually.
  13. 13. Beat the oil in with a whisk until the sauce is creamy.
  14. 14. Finally, adjust the dressing to taste with salt and pepper.
  15. 15. Put the arugula and apple wedges into a large bowl.
  16. 16. Pour the salad dressing over them.
  17. 17. Toss everything gently until everything is evenly coated.
  18. 18. Distribute the salad onto the plates.
  19. 19. Sprinkle the walnuts generously over the top.
