🍽️ Quick Roulade Skewers

Ingredients
- 6 veal cutlets (kitchen-ready, á 80 g)
- 1 bunch basil
- salt
- pepper (from the mill)
- 150 g ricotta
- 6 slices Parma ham
- 2 tbsp olive oil (for frying)
Instructions
- 1. Rinse the cutlets under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Pound the cutlets flat using a meat mallet or rolling pin.
- 4. Rinse the basil briefly under cold water.
- 5. Shake the greens to remove excess water.
- 6. Carefully pluck the basil leaves from the stems.
- 7. Season the flat cutlets with a pinch of salt and freshly ground pepper.
- 8. Spread the ricotta evenly over each cutlet.
- 9. Place the basil leaves and slices of Parma ham on top of the ricotta.
- 10. Roll each cutlet up tightly starting from the short side.
- 11. Place three rolled roulades side by side on a plate.
- 12. Trim the three roulades so that they are all the same length.
- 13. Lightly oil four wooden skewers for kebabs.
- 14. Thread the skewers through the three roulades at equal intervals.
- 15. Repeat this process with the remaining roulades.
- 16. Cut the roulades between the wooden skewers.
- 17. You should now have eight individual skewers, each with three meat rolls.
- 18. Heat oil in a large frying pan over high heat.
- 19. Fry the skewers on both sides until golden brown.
- 20. Remove the skewers from the pan and serve immediately.
