🍝 Juicy Beef Roulades with Buttered Ribbon Noodles

Ingredients
- 4 beef roulades (150 g each)
- salt
- pepper (from the mill)
- 2 onions
- 2 garlic cloves
- 2 small red bell peppers
- 2 tbsp finely chopped basil
- 1 egg yolk
- 2 tbsp breadcrumbs
- olive oil
- 250 ml beef broth
- 50 ml alcohol-free red wine
- 200 g ribbon noodles
- 2 tsp butter
- 2 tbsp chopped parsley
Instructions
- 1. Rinse the piece of meat under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Rub the meat generously with salt and pepper.
- 4. Preheat the oven to 250 °C (220 °C for fan-assisted ovens or gas setting 4 to 5).
- 5. Place the whole bell pepper in the oven.
- 6. Roast the bell pepper until bubbles form on the skin.
- 7. Remove the bell pepper from the oven and peel off the charred skin.
- 8. Halve the bell pepper and remove the seeds.
- 9. Cut the flesh of the bell pepper into small cubes.
- 10. Peel the onion and the garlic clove.
- 11. Finely chop the onion and garlic.
- 12. Heat 2 tablespoons of oil in a pan.
- 13. Sauté the onion and garlic over medium heat until they become translucent.
- 14. Add the bell pepper cubes.
- 15. Sauté the pepper for about 2 minutes while stirring.
- 16. Stir in the egg yolk, breadcrumbs, and basil into the vegetable mixture.
- 17. Season the filling with salt and pepper.
- 18. Spread the filling evenly over the meat slices.
- 19. Roll the meat slices tightly.
- 20. Secure the ends of the roulades with a toothpick each.
- 21. Heat 2 tablespoons of olive oil in a frying pan.
- 22. Brown the roulades on all sides over medium heat.
- 23. Deglaze the pan with red wine.
- 24. Pour in the beef broth.
- 25. Close the lid of the pan.
- 26. Place the pan in the preheated oven.
- 27. Simmer the roulades at 100 °C (80 °C for fan-assisted ovens or gas setting 1) for 1.5 to 2 hours.
- 28. Season the sauce with salt and pepper at the end.
- 29. Cook the ribbon noodles in boiling salted water until al dente (firm to the bite).
- 30. Drain the noodles.
- 31. Let the noodles drip dry well.
- 32. Melt the butter in a pot.
- 33. Toss the noodles in the melted butter.
- 34. Slice the finished beef roulades.
- 35. Plate the roulade slices together with the hot noodles.
- 36. Pour the sauce over the dish.
- 37. Garnish the dish with fresh parsley.
- 38. Serve the dish immediately.
