🍽️ Rouladen with Creamy Sauce

Ingredients
- 4 slices beef roulade
- salt
- pepper (from the mill)
- 4 tbsp horseradish (from the jar)
- 4 small slices ham
- 1 carrot
- 1 shallot
- 1 clove garlic
- 2 tbsp parsley (finely chopped)
- 1 tbsp flour
- 2 tbsp ghee
- 0.5 tsp marjoram
- 250 ml meat broth
- 3 tbsp crème fraîche
- 1 tbsp chive rings
Instructions
- 1. Lay the meat slices flat.
- 2. Season the meat with salt and pepper.
- 3. Spread a thin layer of horseradish onto the meat slices.
- 4. Place slices of ham on top of the seasoned meat.
- 5. Peel the carrot, the shallot, and the garlic.
- 6. Finely chop the carrot, shallot, and garlic.
- 7. Distribute the finely chopped vegetables evenly over the meat slices.
- 8. Roll the meat slices tightly into roulades.
- 9. Secure the roulades with kitchen twine or special clips.
- 10. Coat the roulades in flour until lightly covered.
- 11. Heat ghee (clarified butter) in a pan.
- 12. Fry the roulades in the hot fat until browned on all sides.
- 13. Add marjoram and meat broth to the pan.
- 14. Cover the pan.
- 15. Simmer the roulades on low heat for about one and a half hours.
- 16. Remove the cooked roulades from the pan.
- 17. Keep the roulades warm.
- 18. Whisk crème fraîche into the pan juices.
- 19. Let the sauce simmer briefly until it thickens.
- 20. Season the sauce to taste with salt and pepper.
- 21. Pour the finished sauce over the roulades.
- 22. Sprinkle the dish with freshly chopped chives.
- 23. Serve the roulades alongside egg noodles.
