  5. 5. Peel the carrot, the shallot, and the garlic.
  6. 6. Finely chop the carrot, shallot, and garlic.
  7. 7. Distribute the finely chopped vegetables evenly over the meat slices.
  8. 8. Roll the meat slices tightly into roulades.
  9. 9. Secure the roulades with kitchen twine or special clips.
  10. 10. Coat the roulades in flour until lightly covered.
  11. 11. Heat ghee (clarified butter) in a pan.
  12. 12. Fry the roulades in the hot fat until browned on all sides.
  13. 13. Add marjoram and meat broth to the pan.
  14. 14. Cover the pan.
  15. 15. Simmer the roulades on low heat for about one and a half hours.
