  1. 1. Peel the shallots, but leave the root end intact.
  2. 2. Cut the shallots in half lengthwise.
  3. 3. Heat the butter in a pot.
  4. 4. Sauté the shallots until they become translucent.
  5. 5. Pour in the red wine and the port wine.
  6. 6. Bring the mixture to a boil.
  7. 7. Add the cloves, the cinnamon stick, and the bay leaf to the pot.
  8. 8. Season the shallots with salt and pepper.
  9. 9. Reduce the heat to low.
  10. 10. Cook the shallots covered for about 40 minutes.
  11. 11. In the meantime, dice the dried plums.
  12. 12. After 30 minutes of cooking, stir the plum cubes into the shallots.
  13. 13. Serve the red wine shallots hot or at room temperature.
