🍰 Pears in Red Wine Syrup

Ingredients
- 4 pears
- 500 ml red wine
- 100 g sugar
- 4 strips lemon zest
- 1 cinnamon stick
- 100 g couverture chocolate
Instructions
- 1. Pour the red wine, sugar, lemon zest, and broken cinnamon stick into a pot large enough to hold the pears.
- 2. Peel the pears but leave the stems on.
- 3. Place the pears in the pot with the stems facing downwards.
- 4. Slowly bring the mixture to a boil.
- 5. Simmer the pears for about 10 minutes until they are soft.
- 6. Spoon the syrup over the pears repeatedly to ensure even cooking.
- 7. Remove the pears from the pot and let them cool down.
- 8. Chop the chocolate and melt it using a hot water bath.
- 9. Pour the melted chocolate onto a marble slab.
- 10. Spread the chocolate thinly using a palette knife.
- 11. Let the chocolate set for a short moment.
- 12. Scrape off long strips using a spatula.
- 13. Arrange the chocolate strips in a circular shape.
- 14. Place the chocolate decoration on a dessert plate.
- 15. Place one cooled red wine pear in the center of the chocolate decoration.
