  2. 2. Peel the pears but leave the stems on.
  3. 3. Place the pears in the pot with the stems facing downwards.
  4. 4. Slowly bring the mixture to a boil.
  5. 5. Simmer the pears for about 10 minutes until they are soft.
  6. 6. Spoon the syrup over the pears repeatedly to ensure even cooking.
  7. 7. Remove the pears from the pot and let them cool down.
  8. 8. Chop the chocolate and melt it using a hot water bath.
  9. 9. Pour the melted chocolate onto a marble slab.
  10. 10. Spread the chocolate thinly using a palette knife.
  11. 11. Let the chocolate set for a short moment.
  12. 12. Scrape off long strips using a spatula.
  13. 13. Arrange the chocolate strips in a circular shape.
  14. 14. Place the chocolate decoration on a dessert plate.
  15. 15. Place one cooled red wine pear in the center of the chocolate decoration.
