🍽️ Creamy Red Wine Risotto with Fresh Strawberries

Ingredients
- 250 g strawberries
- 1 shallot
- 1 tbsp olive oil
- 1 tbsp butter
- 250 g risotto rice (e.g. Arborio)
- 800 ml dry red wine
- 50 g freshly grated Parmesan
Instructions
- 1. Wash the strawberries thoroughly and remove the green stems.
- 2. Cut the strawberries into bite-sized pieces.
- 3. Set aside a few nice strawberry pieces for decoration.
- 4. Peel the shallot and dice it into very small cubes.
- 5. Heat the olive oil together with the butter in a pot.
- 6. Add the diced shallot to the pot.
- 7. Sauté the shallot over medium heat until soft and translucent.
- 8. Add the risotto rice to the pot and stir briefly.
- 9. Deglaze the rice with a small amount of red wine.
- 10. Continue stirring until the rice has completely absorbed the liquid.
- 11. Now add the cut strawberries to the pot.
- 12. Continue to add red wine gradually and stir.
- 13. Repeat adding wine until the rice is cooked through.
- 14. The cooking process takes about 20 minutes.
- 15. If necessary, add a little more red wine to achieve the desired consistency.
- 16. Fold in the grated Parmesan at the end.
- 17. Fill the finished risotto into four bowls.
- 18. Garnish each dish with the reserved strawberries.
- 19. Sprinkle some additional grated Parmesan on top.
- 20. Serve the risotto immediately while warm.
