  1. 1. Wash the strawberries thoroughly and remove the green stems.
  2. 2. Cut the strawberries into bite-sized pieces.
  3. 3. Set aside a few nice strawberry pieces for decoration.
  4. 4. Peel the shallot and dice it into very small cubes.
  5. 5. Heat the olive oil together with the butter in a pot.
  6. 6. Add the diced shallot to the pot.
  7. 7. Sauté the shallot over medium heat until soft and translucent.
  8. 8. Add the risotto rice to the pot and stir briefly.
  9. 9. Deglaze the rice with a small amount of red wine.
  10. 10. Continue stirring until the rice has completely absorbed the liquid.
  11. 11. Now add the cut strawberries to the pot.
  12. 12. Continue to add red wine gradually and stir.
  13. 13. Repeat adding wine until the rice is cooked through.
  14. 14. The cooking process takes about 20 minutes.
  15. 15. If necessary, add a little more red wine to achieve the desired consistency.
  16. 16. Fold in the grated Parmesan at the end.
  17. 17. Fill the finished risotto into four bowls.
  18. 18. Garnish each dish with the reserved strawberries.
  19. 19. Sprinkle some additional grated Parmesan on top.
  20. 20. Serve the risotto immediately while warm.
