🍽️ Crunchy Red Cabbage Salad with Honey-Vinegar Dressing

Ingredients
- 600 g red cabbage
- 5 tbsp red wine vinegar
- 1 tbsp apple juice
- 1 tbsp olive oil
- 2 tbsp liquid honey
- 1 pinch allspice powder
- 1 pinch clove powder
- 1 pinch cinnamon powder
- salt
- pepper (from the mill)
Instructions
- 1. Remove the outer leaves of the red cabbage and cut the head into four quarters.
- 2. Cut out the hard core from the center of each quarter.
- 3. Slice the red cabbage finely into thin strips.
- 4. Place the cut strips into a large bowl.
- 5. Pour boiling water over the red cabbage.
- 6. Let the cabbage steep in the hot water for five minutes.
- 7. Drain the water and let the red cabbage drain well.
- 8. Whisk the vinegar, juice, oil, and honey together in a small bowl.
- 9. Add the spices to the dressing mixture.
- 10. Season the dressing to taste with salt and pepper.
- 11. Fill the finished salad into jam jars.
- 12. Serve the salad directly from the jars.
