🍽️ Red cabbage salad with sausages and apple garnish

Ingredients
- 1 small head red cabbage (approx. 1 kg)
- 2 tbsp apple cider vinegar
- 2 tbsp orange juice (freshly squeezed)
- 1 tbsp honey
- salt
- 3 spring onions
- 2 apples
- 3 tbsp grape seed oil
- 8 small sausages
- medium-hot mustard
Instructions
- 1. Cut the red cabbage into quarters and remove the hard core in the center.
- 2. Remove the outer leaves and shred the cabbage into fine strips or use a grater.
- 3. Place the cut cabbage into a bowl.
- 4. Mix the cabbage with vinegar, orange juice, honey, and salt.
- 5. Cover the bowl and let the salad marinate for about 30 minutes.
- 6. Wash the spring onions and remove the dry tips.
- 7. Slice the spring onions diagonally into thin rings.
- 8. Peel one apple and remove the core.
- 9. Grate the apple finely using a grater.
- 10. Mix the grated apple with oil and the cut spring onions.
- 11. Fold the apple-onion mixture into the marinated red cabbage.
- 12. Finally, season the salad with a little salt.
- 13. Thread the sausages onto skewers.
- 14. Warm the sausages in simmering water.
- 15. Wash the second apple and dry it.
- 16. Cut the apple into quarters and remove the core.
- 17. Cut the apple quarters into wide wedges.
- 18. Distribute the finished salad onto plates.
- 19. Place the warm sausages on top of the salad.
- 20. Add one apple wedge and place a dollop of mustard on it.
- 21. Serve the dish immediately.
